Stage Program 2011

Introduction & Opportunity
Tony Conigliaro is widely acknowledged as one of the UK’s pioneering drinks creators, and is continually working to break the boundaries surrounding drinking experiences.

In 2009 he and his partner opened The Bar With No Name at 69 Colebrooke Row, which has been recognised as a phenomenal success within the industry.

The Stage Program at 69 Colebrooke Row will provide an opportunity for Bartenders and students of Cocktail and Food Science to work first hand in the only bar related Drinks Lab in the world.

Successful applicants will have the opportunity to work with Tony Conigliaro in a lab dedicated to furthering the craft of the cocktail and fully realizing projects as they filter into the bar.

Subjects will be assisting in creative projects and become incorporated in the daily procedures of the bar operating at 69 Colebrooke Row.

The program is set to commence in February of 2011 with applicants vetted during January 2011.

SECTION I
A. Candidate Requirements

Applicants must be professionals who have worked within their area of specialty for a minimum of 3 years. While a degree is not required, you must provide proof of accomplishment and understanding within your field, as well as supporting professional references.

B. Program Structure

The program is offered for either a 1 week or 2 week term, the time of which will be split between the Lab and the Bar at 69 Colebrooke Row.

Lab work & Opportunity

Access and training on technical equipment
Complex analogy and breakdown of flavour and smell and the effects on taste
Methodical thought and process of beginning to end stages of drink creation
Utilization of advanced chemicals and techniques unique to 69 Colebrooke Row
Use of Essential Oils

Bar work & Opportunity

Observe and interact with world class bartenders
Training behind the bar at 69 Colebrooke Row
Access to bar structure

C. PROGRAM PERIMETERS

Program shall last for a duration of either 1 or 2 weeks
Applicant will provide own transportation and lodging
Applicants will provide own uniforms (Black trouser, white dress shirt, black dress shoe)
Lunches provided
No necessary purchase of lab materials

SECTION II

A. APPLICATION PROCESS

Applicants are required to complete the application form and provide a minimum of 2 relevant references.
Neither a degree nor professional experience are a dire requirement for candidacy, as we are hoping to involve individuals from an assortment of backgrounds.

Candidates will be interviewed via video chat and will be given opportunity to have any concerns addressed or to ask any supporting questions.

Applicants will be interviewed via telephone and video chat and upon approval will be provided a mutually amicable time slot which will be confirmed via contract.
